Steel dash overlay question

Has anyone bought a steel dash overlay from J.B.G? I am going to do an custom dash setup, im getting rid of all the factory stuff and installing a set of aftermarket gauges. Would it be easier to remove everything from the factory dash. install the overlay and then hole saw through both dashes? Or should I cut a large rectange out of the center of the factory dash and then install overlay and cut gauge holes....? or does any one have a better idea?
