95 Bronc runs far better when outside temp below 70

So my 95 drives like its brand new when the temperature is below 70 outside and even better if its colder. When the temp creeps up into the 80's it feels like im towing a load of bricks. My temp guage stays the same no matter the outside temp. Is there anything I can adjust to help my engine run better when its warm outside?

Im in Texas so even in the Winter I stand to see a lot of warm afternoons.

Try a lower temp thermostat?

My Bronco is OEM at 195* thermostat.. I must have a busted one, or a much lower one as my temp guage reads about 140* when it's 20* outside.. or 160* when it's 95* outside. In summer in 95* heat, sitting with the A/C on, it'll bump up to 210*

I put a 2'x2' plywood between my radiator and now when it's 20* outside..it'll hover around 160*..and same for when it's 80* outside.

That said.. I find my truck to run perfectly at around 160-190* range.. when it pushes that 200* mark..it does slow down a lil....
