Is my 75 driverside exhaust manifold (with the emissions control valve removed)

the same as a pre 75 manifold? It doesn't seem to have enough recess for the donut gasket. I ordered a mandrel bent dual exhaust package from LMCtruck and want to make sure all of the geometry is right. Thanks.

No. The manifold for the non-heat riser is different from the manifold for the heat riser. One with the heat riser has basically a flat surface. You can leave the heat riser there or get a new manifold without the provision for the heatriser.
