If I remember correctly, some of the cables/ switches/ controls do not have set screws on the face of the dash. These will be held in with a nut from the back of the dash. Except the ignition and the headlight switch, they have their own ways of being released.
To remove the ignition switch, put the key and cylinder in the accessory position, insert a paperclip into the small hole in the face of the lock cylinder and turn the key further in the counter clockwise direction. The lock cyl should come out. The ignition switch is spring loaded with a cam lock built into the bezel. Reaching under the dash, pull the switch towards the dash and turn the bezel in a counter clockwise direction. (the spring is quite strong it may take more than one attempt to do this) the bezel will come out of the dash and the switch should now be free.
On the top of the light switch towards the back there should be a small spring loaded button, hold this button down while gently pulling the light switch to the headlight on position and just beyond that you should feel it release the stem. It may take more than one try to release the light switch.
Forcing the knobs off the cables or switches will result in a very expensive replacement session.
Maybe try releasing the operating ends of the cables from their respective flaps/ ducts (mark their locations for ease of re-assembly) and remove the dash with the knobs/ cables/ controls still attatched.
